| National Wedding Cake Competition: | This Division is open to anyone 18 yrs of age or older who decorates at a Semi-Professional level or higher. Each entrant must choose a title for their entry and carry this title throughout the cake, table skirting, and any decorations used on the table. The themes are selected by Kerry Vincent each year and are posted in the rules at the OSSAS web site. |
| 2004 Orchid Corsage Competition | All levels of decorators may enter this category. Botanically correct displays are called for. The subject matter does change from year to year, so be sure to check the current regulations. This category is judged by sugar art judges, as well as a horticulture expert from the field related to the subject matter chosen for each year. This category has special monetary prizes. |
| Masters Division | Entrants who have taken the equivalent of four (4) weeks of professional classes. This includes ANY combination of classes and/or seminars totaling 20 full days of professional instruction. |
| Professional Division | Entrants who meet any one of the following: a) Past or present teacher having taught three (3) or more classes, b) operator of an in-home business selling MORE than an average of 36 cakes per year, c) employed as a decorator at a commercial bakery more than three (3) years, or d) past or present owner of a commercial bakery, or e) has taken the equivalent of ten (10) full days of classes from a recognized professional teacher. |
| Semi-Professional Division | Entrants who meet any one of the following: a) Past or present teacher having taught less than three (3) classes, b) operator of an in-home business selling LESS than an average of 36 cakes per year, c) employed as a decorator at a commercial bakery three (3) years or less, or d) has taken the equivalent of five (5) full days of classes from a recognized professional teacher. |
| Adult Advanced Division |
|
| Adult Beginner Division | Less than two (2) years decorating experience or no more than two (2) courses of cake decorating lessons. |
| Teen Division | Entrants from 13 to 17 years of age. |
| Junior Division | Two Sections are available - 6 years and under or 7 years to 12 years. There is one category per age group and entries can be any style of cake. |
| Gingerbread Competition | This is a special category open to decorators of all ages and skill levels. The entries may be any type of gingerbread construction, not necessarily Christmas. |
| Tasting Competition - Pound Cake | This is a special category sponsored by Royal Pacific Foods, Guittard Chocolate, and Nielsen Massey. Each sponsor provides the entrants with a sample of their product to be used in the entrant's recipe. NOTE: The type of bakery product to be made changes from year to year (i.e.. brownies, muffins, pound cake...). |
| Winner's Circle / Demos | The entries in this category are NOT judged. They include winning entries from other shows and display pieces created by the demonstrators during the show. Any type of entry or technique may be included. |
